110 g sugar
175 g butter (soft)
250 g flour
½ sachet of yeast
3 ts dark rum
250 g candied dried fruits
Pre-heat the oven to 180 degrees C.
Grease and butter a large cake tin, then dust with flour.
Mix to form a smooth dough with all the ingredients except the dried fruit.
Gradually add the dried fruit to the mixture until it is well incorporated.
Pour the mixture into the prepared cake tin and smooth down the top - you can also use some walnuts or crushed hazelnuts to garnish the cake.
Bake for 10 minutes at 180 degrees, then reduce the heat to 150 degrees and bake for a further 50 minutes or until cooked through.
