Moist apple & nuts cake


  • 200 g sugar

  • 3 eggs

  • 200 g butter (soft)

  • 200 g self-rising flour

  • 50 g almond powder

  • 2 apples, cut in small slices

  • 60 g walnuts, crushed

  • 60 g hazelnuts, crushed

  • 60 g almonds, crushed


Pre-heat the oven to 170°C (top and bottom heat).

Mix the butter and sugar in a bowl. Whisk until creamy. Add the eggs one at a time and beat until smooth.

Gradually add the self-raising flour to the mixture. Continue to mix until you have a smooth dough.

Add the nuts and mix well with a spatula.

Pour the dough into a greased and floured baking tin, spread the apple slices on top, push them

slightly in the dough and bake for 60 minutes.

Just before the cake is done, test it with a skewer or cake tester. If the skewer comes out clean, the cake is done.

After baking, leave the cake in the tin to cool for a few minutes. Turn the cake out onto a wire rack and allow to cool completely.
