Carrot Cake, Reimagined: All the Flavor, Half the Calories!

Super moist, flavorful, and guilt-free — only 72 kcal per slice!

Ingredients
4 eggs
150 g 0-calorie brown sugar
160 g low fat yogurt
1 banana
140 g all-purpose (plain) flour
4 tsp baking powder
2 tsp ground cinnamon
1 tsp ground ginger
150 g grated carrot
80 g chopped walnuts
Optional
40 g raisins
Cream Cheese Frosting
240 g Philadelphia Lightest (or 3% fat cream cheese)
8 tbsp 0-calorie icing sugar
Preparation
Preheat the oven to 180°C.
Option: Make the frosting by mixing the cream cheese and 0-calorie icing sugar until smooth. Place in the fridge until ready to use.
In a large bowl, whisk the eggs until fluffy using a hand mixer.
Add the 0-calorie brown sugar and continue whisking until light and airy. Mix in the yogurt and banana.
Fold in the flour, baking powder, cinnamon, and ginger until just combined.
Add the grated carrot and, if desired, the raisins and chopped walnuts.
Pour the batter into a cake pan lined with parchment paper. Bake for about 45 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool completely. Spread the cream cheese frosting evenly over the top.
